This recipe is for the Jelly Babies’ Granny.
She loves almonds and orange and a little nibble with her morning cappuccino.
I am kicking myself that we didn’t whip up a batch of these last week when she came to stay. However I did very much enjoy sampling the local coffee shops every day with her and am secretly hoping that the promise of these will have her on the next train down.
These delightful little morsels, need just 4 ingredients, take 1 minute to throw together, and only 12 minutes to bake. In my book, that makes them pretty fantabulous.
150g Golden Caster Sugar
225g Ground Almonds
2 Egg Whites
Zest of an orange
Preheat the oven to 170 degrees and line a baking tray with greaseproof paper.
Throw the sugar, almonds and orange zest together in a bowl and mix well.
Lightly whisk the egg white and add to the bowl and mix together until the mixture begins to hold.
Roll into little bite size balls and place on the baking tray. Squish down ever so gently with the palm of your hand.
Bake until golden (12 to 15 minutes.)
