With an excess of chocolate in the house, the sun shining and the children on their Easter holidays, it seems the perfect time to share my recipe for these delightful Eskimo lollipops.
They are a doddle to make and scrumptious to eat and as they contain fruit they are even a smidgen virtuous. They are fabulous for parties, great as an after school snack and super refreshing on a warm spring day.
Peel and chop the bananas in half.
Lay the banana halves on a tray covered in greaseproof paper, and place in the freezer for a couple of hours.
Just before you are ready to eat the bananas, melt the chocolate over a very gentle heat.
Remove the bananas from the freezer and dip them into the chocolate and scatter with the sprinkles.
Eat immediately or pop back in the freezer to snack on at another time.
The frozen bananas taste a little like ice cream and are therefore delicious served just on their own but the chocolate and sprinkles takes this scrumptious treat to another level.
